Formula that returns the date that a criteria is met

My journal entries have two dates. One is the date I want it to show up in the system. The second date is the actual date I loaded the journal entry. I would like to create a formula that shows the date I loaded the entry. A document number is created within my spreadsheet once I load the entry so I'm thinking I could base the formula on if that cell is populated or not. The part that is hanging me up is that essentially I want the formula result to not change once there is a document number.

Here's a screenshot of the header I'm working with. The document date is the date I want to show when I loaded the JE. The Posting date is hardcoded and always the last day of the month. The document number is the field that is auto populated with a number once I load the JE.
